This oven-baked chicken (or any meat) is infused with Thai Spicy Seafood Soup made with fresh herbs! Easy to find the ingredients and easy to prepare! Absolutely delicious.
Ingredients
- Fresh red onion.
- Fresh garlic.
- Fresh ginger.
- Fresh red chilies.
- Fresh coriander leaves.
- Fresh green onions.
- A packet of Thai Tom Yum Talay soup mix (Optional).
- Freshly grounded black peppercorns.
- Dash of salt.
- Dash of North Korean MSG purchased recently in Pyongyang (Totally optional).
- Dash of salty soy sauce.
- About 1 litre of ketchup which I always buy in a large pouch.
- A few table spoons of coconut oil.
Instructions
The amounts of each of the ingredients depend on personal taste. Ground all the fresh herbs and veggies together with a bit of (fresh) water and mix with the rest of the ingredients except the ketchup. Pour over the chicken thighs and marinade for about one hour. In a heat-resistant glass bowl, add the coconut oil, ketchup and the marinated chicken. Place in the oven (air oven works great) at 250 degrees for 1 hour. Eat and enjoy it. It is truly one of the bests dishes I have made in the past 2 months :))
